~Chicken fajitas…The making of!

For the past two days,  I have been craving for Mexican food. As we all know, ordering it in a restaurant is a pleasant experience however it leaves you with a triple feeling of guilt! The first one being the over-consumption of nachos with salsa sauce. The second one being the over-consumption of drinks such as frozen Margeritas or others and thus increasing your caloric intake by two! And thirdly the over- consumption fajita wraps leaving you with an oily after taste and bloated stomach!

Having remembered all of the above and knowing that during this period of the year, calorie savings is the name of the game, I preferred to stay home today and prepare a light Mexican lunch!

~Chicken Fajitas… The making of!

You will need the following ingredients:

500 g of Chicken breast sliced

1 bowl of Fat free yogurt

Fajita spices

Sliced onions

Mexican salsa sauce (prepared with tomatoes, onions, red peppers and green peppers)

Fresh mushrooms sliced

50g cheddar cheese

Method of preparation:

Combine the bowl of yogurt to the sliced chicken breast and add the fajita spices and mix well.

In a large pan, display the mushrooms and let cook.Add the sliced onions then the Mexican salsa sauce. Remove and place in a separate bowl.

Cook the chicken in another pan.Once cooked add the prepared mixture of mushrooms.

Top with shredded cheddar cheese and serve with a tbsp of light sour creme, two tbsp of guacamole and Mexican salsa sauce!

But, where are the tortilla wraps ?

You don’t have to include them!! As long as you’re planning to maintain your body weight or lose some kilos of pure fat, opt for this healthier form of chicken fajitas that doesn’t require frying and doesn’t leave you with an oily after taste! You will definitely be tempted by those nachos and have around 15 pieces! Thus, forget about the tortilla wraps 😉
