Eggplant is an excellent source of dietary fiber and a very good source of vitamins B1, B6 and potassium.

Potassium in eggplants brings a balance in salt intake and maintains a nice level of hydration. It also plays a role in regulating blood pressure.

Nasunin is a potent antioxidant found in eggplants.It has an inhibitory effect on the growth of some cancer cells.

Eggplant lowers cholesterol levels in the bloodstream.

In order to preserve all the nutrients, I lightly cooked small eggplants with tomato sauce, diced tomatoes, onions and red peppers and added 20g of low fat cheese and enjoyed eating them with a green salad made of lettuce, cucumbers with lemon juice, olive oil and oregano!

Just like everyday, i started my day with … (the formula you already know 🙂 ) then i had 30g of Special K -Oats&Honey- with a glass of skimmed milk!

I had for dinner a salad made of lettuce, tuna, green beans, boiled potatoes, anchovies, cherry tomatoes, etc. with a balsamic dressing!

As for my afternoon snack, it was made of 30g of dark chocolate!
