Skip the butter, the sugar, the sweet escape and plan to prepare those salty low fat muffins before it’s too late!
Ingredients
1 3/4 cup flour
2 tsp baking powder
1/4 tsp salt
1 beaten egg
3/4 cup skimmed milk
1/4 cup canola oil
6 slices of turkey
60g of shredded low fat cheese
1 tbsp mustard
1 cup chopped mushrooms
1/2 diced yellow pepper
Method of preparation:
1-Mix flour, baking powder and salt. In a separate bowl whisk the egg combine the oil and milk.
2-Add egg mixture all at once to flour mixture. Then add the rest of the ingredients and stir just until moistened.
3-Spoon batter into prepared muffin cups, filling each two-thirds full.
4-Bake in a 400 degrees oven for 20 minutes.
Each muffin has around 155 calories!
