~*When Nammoura goes light ..

Nammoura is a Lebanese semolina cake.
When compared to white flour, semolina is digested and absorbed at a slower rate thus prevents rapid fluctuations in the blood glucose levels! La joie de vivre as well as the passion for eating in moderation are the key components of a successful healthy life; content yourself with one serving!

2 cups semolina
2 cups fat free yogurt
1 cup sugar
5 tbsp rose water
2 tsp baking powder
Cooking spray
23 pieces of almonds

Method of preparation:
1. In a large bowl place the semolina add the yogurt, sugar, rose water and mix until you get an homogenous mixture.Add the baking powder.
2. Spread the batter into the pan sprayed with cooking spray
3. Decorate with halved almonds
3. Bake in a 350ºF oven for 25 to 30 minutes or until a wooden toothpick inserted near centers comes out clean.

Preparation time: 10 minutes Makes: 12 to 16 servings
