1 cup cooked quinoa
1 cup whole wheat flour
1/4 tsp vanilla
1/4 cup orange juice
1/2 cup sugar
1 tsp cinnamon
2 tsp baking powder
1 cup marmalade
1 cup shredded carrots
Method of preparation:
1-Mix quinoa, flour and baking powder. In a separate bowl whisk the eggs combine the orange juice and sugar.
2-Add egg mixture all at once to quinoa mixture. Then add the rest of the ingredients and stir just until moistened.
3-Spoon batter into prepared muffin cups, filling each two-thirds full.
4-Bake in a 400 degrees oven for 20 minutes.
Each muffin has around 110 calories!

Doesn’t marmalade contain a lot of sugar? esp. if we buy them rather than making them?
The one I used here is homemade! Thus the quantity of sugar had been monitored.. You can replace the marmalade with apple sauce bought from the supermarket without added sugar or prepare it at home! In all cases the quantity of sugar powder used in this recipe is moderate!
I couldn’t find marmalade in the supermarkets! is it any kind of jam?
