A couple of friends are coming over tonight and I decided to prepare zucchini-pizza style along other bites… Their recipe is very easy and they are indeed low in carbs and gluten free when compared to regular pizza and definitely richer in fiber!
6 large zucchinis
240g goat cheese or Bulgarian cheese
6 sun-dried tomatoes (Benina)
1 teaspoon olives tapenade
1/2 tsp rosemary
60g pecorino cheese
2 tbsp chopped fresh chives (ciboulette)
Method of preparation:
Half the zucchinis, salt them, let them rest for 20 Minutes before placing them on a tray in the oven for 10 minutes (200degrees C). Meanwhile, in a large mixing bowl place the white cheese, using a fork mix it with the olives tapenade, herbs, the chopped sun-dried tomatoes.
Take out the zucchinis from the oven and spread the cheese mixture evenly on top of each slice. Top each one with 5g of shredded pecorino, chives and place in the oven for 10 minutes.
Remove from the oven, place on a cooling rack and enjoy!
