Feijoada is the national dish of Rio de Janeiro prepared with black beans and usually a variety of salted pork, beef, sausages… Traditionally served on Saturday afternoon and paired with an event like watching a soccer game … This suggested recipe is vegetarian and comprises a succulent combination of fruits and vegetables, a blend of vibrant spices and tropical ingredients to bring to your table while watching the Olympics!

1 kg cooked black beans 

2 large eggplants cut into cubes 

2 cups of pumpkins cut into cubes

5 medium sized zucchinis cut into strips 

1 large red onion 

1 red pepper cut into cubes

1 yellow pepper cut into cubes 

2 cloves garlic 

4 tomatoes chopped 

4 tbsp Mexican salsa sauce 

2 tbsp paprika 

6 tbsp chopped coriander 

30g dark chocolate chips 

1 vegetable stock cube 

3 tbsp canola oil 

For the salsa: 

10 slices of pineapple grilled and diced 

1 large mango diced

2 red hot chili peppers sliced 

1 red onion sliced 

4 tbsp chopped coriander 

3 tbs cherry vinegar 

200g labneh light @taanayellesfermes 

Method of preparation: 

In a large cooking pan, place the oil with onions, garlic, peppers, eggplants. Add the tomatoes and rest of the ingredients and cook over low fire for 45 to 60 minutes. 

For the salsa mix the ingredients altogether and refrigerate. 

Serve the cooked beans with veggies and top them with two tbsp of salsa and a tablespoon of labneh light and enjoy this Brazilian dish!
