Whether You’re not a big fan of maamoul or would simply like to try something new, here’s a great tasting Easter Greek Bread known as “Tsoureki”! The braid symbolises the holy trinity and resurrection of life that comes with springtime. Boiled eggs could decorate it and when red dyed they symbolise the blood of Jesus Christ… Ingredients:
135 g reduced fat butter
135g skimmed milk
200g brown sugar
4 eggs
1/4 tsp vanilla
800 g flour
20 g instant yeast
Zest of 1 orange
4g masticha
4g mahlab
Method of Preparation:
1-In a saucepan place the milk, butter and sugar and stir on low heat until sugar is dissolved
2-In a large mixing bowl place the eggs with vanilla and whisk with sugar.
3-Substitute the whisker with a dough Kneader (I use Master chef gourmet by Moulinex) and gradually add the flour, milk mixture, yeast and the rest of the ingredients.
4-Let the dough rest for an hour or two in a warm place.
5-Preheat the oven to 300 degrees.
6-Divide into small bowls and roll each into 20 cm long strips.Lay three strips side by side pinching together at one end and braid.Pinch together at the other end to hold the loaf intact.
You can press a boiled egg between the strips of the braid.
7-Place the breads on a cooking tray and Brush with a beaten egg.
8-Bake for about 20 minutes or until golden brown.
9-Enjoy in Moderation and Happy Easter 🌼
~*My Schiacciata Di Pasqua inspired cake! In Tuscany, on Easter a sweet bread named “Schiacciata Di Pasqua” is prepared to celebrate this holy period and nature’s renewed abundance! To reduce the load of carbohydrates and the preparation time of this dough, I decided to select the main ingredients and prepare a cake instead of preparing a dough and waiting for it to rise for hours before baking it!
Ingredients:
3 eggs
1/4 tsp vanilla
150 ml milk
2 tsp baking powder
3 cups whole wheat flour
1.5 cups brown sugar
1/2 cup olive oil
3/4 cup freshly squeezed orange juice
3 tbsp Kirsch
8 g aniseeds
For decoration: aniseeds and organic flowers
Method of Preparation:
1-Start by whisking the eggs with vanilla. Add the sugar, milk and gradually add the flour, olive oil, orange juice and the rest of the ingredients.
2-Preheat the oven to 350 degrees.
3-Grease a round standard cake pan with cooking spray.Pour the batter into the cake pan and bake for 25 minutes or until toothpick inserted into the middle comes out clean, rather than coated with batter.
4-Take the cake from the oven and let it cool before handling it!
5-Decorate with aniseeds and organic flowers!
