5 Ingredients //Keto-Friendly//Low Fat 🎃🍄Pumpkin-Porcini Soup 🎃🍄 --‐-----------‐-------------------------------------------------------------------Ingredients: 2 kgs pumpkin (peeled and cut into cubes) 500 ml coconut milk 40g dried porcinis 3 tbsp olive oil Dried Chives Maldon Salt Black pepper Method of Preparation: Bring the punpkin cubes to boil then drain water.Add a teaspoon of salt and black pepper and process using a hand blender until you get a smooth and soft mixture. Add the coconut milk and mix. Meanwhile, soak the porcini in lukewarm water for 20 minutes.
