~*The Vegan Meatless Burger Recipe πŸ”

Ingredients: (Makes around 4 Burgers)

500g soy meat chunks @naturaliafoodlb
500g fresh mushrooms
Lukewarm water
2 tbsp coconut oil
1 tsp Maldon salt
1/2 tsp black pepper
1 red onion
2 tbsp mustard “moutarde fine douce” @maisonmaille
2 tbsp buckwheat flour (may need more)
2 tbsp Italian herbs
3 tbsp Worcestershire sauce
1 egg (for a vegetarian burger option) or it could be substituted with 2 tbsp ground flaxseeds whisked in 3 tbsp of water until the mixture becomes gelatinous (for the vegan option).
Coconut oil
Mustard
4 Wholewheat buns
1 small sized Red cabbage
Mint leaves
4 tbsp White balsamic vinegar
2 tbsp olive oil
Red onion slices

Method of Preparation:

1-Soak the soy meat chunks in lukewarm water.Once they absorb the water and their texture changes place them in a pan.

2-Meanwhile, in a food processor pulse the mushrooms.Chop the onion and transfer the mushrooms and onion to the pan.Add the coconut oil, salt, pepper and cook for a minute.

3-Transfer to a large mixing bowl and add the remaining ingredients (mustard, buckwheat flour, herbs, sauce, flaxseeds or an egg).Cling film and refrigerate for a couple of hours.


4-Remove from the fridge and form patties.In a large pan place a large spoon of coconut oil and cook the patties 4 minutes per side.

5-Prepare the whole wheat buns by emptying the upper bun bottom.Spread mustard.And top it with a patty.
6-In a food processor pulse red cabbage leaves.Transfer them to a bowl and add white balsamic vinegar, olive oil, mint leaves, black pepper and Maldon salt to taste.
7.Serve the burger with a small bowl of healthier red cabbage coleslaw substitute, red onion slices and some mustard on the side.
