Salmon Filet Ottolenghi×Eat Like Nicole

This recipe inspired from @ottolenghi
With many modifications is loaded in Omega-3 and antioxidants that would help strengthen your immune system.

Ingredients:
150 g salmon filets × 7
1/2 onion
6 to 12 green olives
1/4 cup pine nuts
1/2 cup raisins
1 tsp Saffron
Olive oil
Red wine vinegar
4 tbsp capers
Soy Sauce Light
Creamy Dijon  @maisonmaille
Tahini
Honey
Water
2 kg steamed Broccoli

Method of Preparation:
In a food processor, place half an onion with pitted olives and pulse.Transfer to a pan, add 2 tbsp olive oil, pine nuts, raisins and cook for 4 min. Add the saffron and 2 tbsp red wine vinegar, stir and set aside.
In another pan, cook the salmon filets with a tbsp of olive oil and 2 tbsp soy sauce light until golden brown on all sides.
In a small bowl, place 1 tbsp creamy Dijon, 1 tbsp tarator and 1 tsp honey. Stir well and incorporate water gradually while stirring until you get a homogeneous texture. This sauce is scrumptious!! I highly recommend you trying it!
Plating: start by placing the salmon filet, top it with the mixture (onions, olives, pine nuts, etc.) Add the broccoli and either serve with the sauce aside or on top.
