Oatmeal Goat Cheese herbs Cookies with Homemade pesto anchovies dip

Last night’s themed dinner 🇮🇹 #italy was on our mind. May God bless us all and give #italians much strength to overcome #coronavirüs… I’d love to share with you this scrumptious recipe from my #aperitivo menu paired with this vintage song #guardacomedondolo by #edoardovianello #italianisimo


Oatmeal Goat Cheese Cookie with herbs

•1 1/4 Cup Oats

•1/2 Cup Oats flour

•120 ml Olive oil

•1 Egg

•3 tbsp Italian herbs

•120g shredded Hard Goat Cheese (Chevrette) @fricoarabia

Method of Preparation:

Mix the dry ingredients.Add the olive oil.Whisk the egg and incorporate it.Add the cheese.Mix well and Pre-heat the oven to 180°C.
Place 1 tsp of the mixture on a tray and shape it into a round cookie.The mixture will yield 24 cookies. Bake for 15 min then set aside.


Homemade Pesto with Anchovies and black olives dip

In a food processor place around 4 tbsp of homemade pesto (basil leaves, pine nuts, olive oil, garlic, parmesan cheese) with 4 anchovies filets and 5 pitted black olives. Blend until you get a homogeneous dip.


Dice 2 to 3 tomatoes and cook in a pan with 1 tbsp olive oil.Set aside.

To assemble this appetizer you’d need to top the cookie with 1/2 tsp of the dip and 1 tsp of cooked tomatoes.
