” Sinnerman” is an African American traditional spiritual song; a gospel song. It is based on biblical precepts such as ‘sinners’ and Judgment Day. It has been recorded by a number of performers:
-It was recorded in the 1950s by Les Baxter, The Swan Silvertones, The Weavers and others, before Nina Simone recorded an extended version in 1965 (the longest one – 10 minutes). Nina Simone’s rendition is actually an extended version of the original.She had learnt the lyrics by heart during her childhood as her mother was a Methodist Minister: she would help people confess their sins. “A “sinner”, especially within the context of this song, is someone who willfully and continuously disobeys the laws of God.”

For the Dough
2 1/2 Cups flour + 20 g Instant Yeast – Combined together in a large mixing bowl.
1/3 Cup butter + 1/3 Cup granulated sugar + 1/2 tsp salt – mixed in a saucepan and heated until butter melts.
3 eggs – whisked in a bowl

Beat with an electric mixer on low speed for 30 seconds then on high speed for 5 minutes incorporating Additional:
2 1/2 Cups flour
Turn dough onto a lightly floured surface and knead until you get a smooth and elastic texture. Shape the dough into three balls.
Take one of the three balls and knead it with a tbsp of Matcha tea.

Place the balls in 3 different containers, cover and let it rise in a warm place until double (i usually place them in the turned off oven for around an hour).

Roll each dough into a 20 cm / 30 cm rectangle.
Spread the filling*evenly on the rectangles and roll up each rectangle starting from the long side. Each roll should yield 12 to 13 pieces.

Place cut sides down in greased 25 cm round baking pans.


Chill for 12 to 24 hours at room temperature.
The filling: 3/4 cup dark brown sugar+ 1/3 cup @elleetvireleb Butter+ 1 tbsp cinnamon + 1/4 cup flour.
1/2 Cup black raisins for the black raisins cinnamon rolls
1/2 Cup dark chcocolate chip for the chocolate chips cinnamon rolls
1/4 Cup black raisins + 1/4 Cup dark chocolate chips for the Matcha Rolls
Brush with coconut milk and Bake in a pre-heated oven 190°C for around 30 to 35 minutes.
For the glazing: mix 1/2 Cup powdered sugar + 3 tbsp light cream @elleetvireleb and drizzle once rolls are cooled.
Yields around 36 rolls
