Broad beans/Fava Beans/ Foul are Highly Nutritious: loaded in fibre and proteins with many vitamins and minerals.
In ancient Greece and Rome, they were used in voting: white bean used to case a Yes Vote, black bean used to cast a No vote.

Planting fava beans the night on Good Friday, brings good luck in Europe.
In Rome, on May 1st, Roman families traditionally eat green fava beans with Pecorino… I hope this year traditions won’t fail to be repeated .. During the #lentperiod and this #quarentine #lockdown this recipe can be easily prepared and shared with your loved ones  خليك_بالبيت#

Ingredients: (for one serving)

• 

1 whole wheat wrap
1/2 Cup of fava beans
1/2 a small avocado
1/2 a small onion
1/2 a tomato
5 pitted and diced olives
2 tbsp chopped fresh coriander
For the dressing:
2 tbsp labneh light @taanayellesfermes
1 tsp olive oil
2 cucumbers pickled in dill
2 tbsp chopped fresh coriander
2 tbsp diced onions
1-2 garlic cloves (i personally omit it #garlicintolerance)
Black pepper
Maldon salt

Method of Preparation:

Start by mixing the boiled beans with coriander, chopped tomatoes, onions, olives.Add the avocado cubes.
In a separate bowl, dilute 2 tbsp labneh light with 3 tbsp water.Add 1 tsp olive oil, black pepper, salt.Mix well and incorporate the crushed garlic cloves and diced pickles and onions.

Take a tbsp or 2 tbsp of the labneh dressing, spread it on the wrap.Add the fava beans mixture and enjoy while listening to some happy tunes under the sun!
