La Focaccia Di Genova

An easy recipe inspired from @frgaudry

Ingredients:

500g flour
Water
Olive oil
10g fresh yeast
12g salt
10g sugar

To decorate:

Fresh Rosemary sprigs
Poppy seeds
Cherry tomatoes
Dill
7omaydah sprigs

Method of Preparation:

1-In a large mixing bowl place the flour.
2-Dilute the yeast in lukewarm water (300ml)
3-Add to the flour with the sugar and 30g olive oil and start kneading for around a minute
4-Add salt and keep on kneading for a couple of minutes
5-Cover with a damp towel and keep in a warm place for around 20 minutes
6-Meanwhile cover the baking tray with olive oil (borders and corners included)
7-Remove the dough and place it on the baking tray and let it rest for another 30min in a warm place covered with a damp towel
8-Remove it and shape the dough into a rectangle and let it rest for another 20 minutes
9-Meanwhile prepare the “saumure”: 50 ml water + 50ml olive oil +a pinch of salt mixed altogether
10-Remove the dough and using your 8 fingers mimic a shiatsu massage to actually poke deep dents.Fill in with the saumure and let it rest in a warm place for another 2 hours
11-Preheat the oven 220C
Sprinkle some Maldon salt (flaky sea salt)decorate the dough and bake for 15 minutes
