Déclinaison de trululufululu; Cauliflower Purée, roasted zaatar cauliflower, zaatar oats crumbles and chicken with herbs Ingredients: For the Cauli Purée: 1 large cauliflower 10 fresh mushrooms 3 tbsp truffle oil 1 tsp Maldon Salt For the Roasted Zaatar Cauliflower: 1 large cauliflower 1/2 cup zaatar mixture 1/3 cup olive oil For the Zaatar Crackers: 1 cup oats 1 egg 1 tsp baking powder 1/2 cup zaatar 1 tsp Maldon salt 1/3 cup olive oil For the chicken: 1Kg Chicken breast 1/3 Cup white balsamic vinegar 1/4 Cup olive oil 2 tbsp dill 2 tbsp chives Black pepper Method Of Preparation: Start with the zaatar crackers by mixing oats, an egg, zaatar, olive oil, baking powder and salt and placing a teaspoon of the mixture on a large cooking tray.Bake for 15 min (160°C). Slice the fresh mushrooms and cook them in a pan.Meawhile, boil cauliflower florets then pulse them in a food processor with truffled oil and cooked mushrooms.Add salt and set apart. This purée is low in carbohydrates when compared to potato purée, has the same texture and is rich in flavors. Mix cauliflower florets with zaarar mixture and olive oil and place in the oven for 20 min (160°C). Cut the chicken breast into chunks, mix with herbs, white balsamic vinegar and olive oil and cook in a pan over medium heat until chicken is well done. For the plating, spread cauliflower purée, place the cauli zaatar florets, some sliced cooked mushrooms and some crackers and chicken.Decorate with green thyme leaves and serve! Following a #paleodiet ? Doing a #whole30food ? Eating a #lowcarb #keto ? You might be getting tired of eating all of your meals with a knife and fork ! Bunless Chicken Fingers in a crispy Sucrine bun Ingredients: -500g chicken breast (boneless, skinless) -2 tsp turmeric -1 egg -2 tbsp mustard -3 tbsp dill -1 shredded onion -1 tbsp Epices Rabelais -6 Sucrines -4 tbsp Capres -2 carrots -Mustard -Papaya -Sesame to decorate Method of Preparation: Cut the chicken breast into chunks and place them in a food processor to grind them and pulse until coarsely chopped. Transfer to a large mixing bowl and blend in the herbs, spices.Using a cheese grater, shredd the onion and add it. Mix well and refrigerate for a couple of hours. Remove from the fridge and shape the mixture into thick fingers (you can also shape them into round ones) and place them in a pan over medium-heat with a large spoon of Canola oil, pan-searing them for 4 minutes.Transfer to a tray and place them in the oven (160°C) for 15 to 20 minutes. Once removed, place each finger on a sucrine leaf with some mustard, capers, papaya cubes and spaghetti shaped carrots. Sprinkle some sesame seeds. You can add cheese such as manchego.
